I love this simple way of cooking our white squash. Today I baked it in a casserole dish, sometimes we grill it..
Cut white squash down the middle of the sides (through the scalloped edges). Lay flat in dish seed side up. I didn’t take the seeds out but you can if you prefer. cut small slits randomly through the top.Sprinkle with black pepper, then garlic powder, then sprinkle with low fat Parmesan cheese. Then top with a dab or 2 of unsalted butter or Nature’s Own Vegan buttery spread. Add just enough water to bottom of dish to coat dish.(needs steam)(maybe an 1/8th of a cup..depending on size of dish). Cover and bake at 350 for about 20 min. uncover, use juices to marinate the tops of squash. recover and bake for 20 more min.
