Cornbread

This was my first time actually making up a bread recipe and not cleaning up an unhealthy one! Ken loves it! Good for corn muffins or bread..

1 1/2 c. cornmeal

1/2 c. whole wheat pastry flour

1 teaspoon honey(raw)

1 tsp baking soda

1 teas. sea salt

1/4 c. safflower oil

1 1/2 c. unsweetened soymilk w/ a couple of drops of lemon added. ( let sit 2-3 min before using)

2 eggs or flax seed substitute

Mix all together in large bowl.

Put in lightly sprayed pan(s), bake at 450 degrees for about 20-25 min. take out when golden brown and inserted knife is clean.
